The Strawberry Salad

Dressing
• 3 tbs. balsamic vinegar
• 1 tbs. honey
• 1 tsp. dissolved feta cheese
• 1 tsp. of Dijon mustard
• 1/2 tsp. olive oil
• Salt to taste
Tip:
Blend together some of the strawberries, balsamic vinegar, honey, dijon and feta cheese. While the blender is running, slowly drizzle in extra virgin olive oil until the dressing is smooth and emulsified.
The Pumpkin Salad
Dressing
• ½ of an orange, juiced
• ½ of a lemon, juiced
• Olive oil
• Salt to taste
• 1 tbs. mustard seeds
• Balsamic vinegar
• Pinch of cinnamon
• Blue cheese
• 2 tsp. honey

• 1 garlic clove, diced
• 1 lemon, juiced
• 1 tbs. mustard
• Salt
• Olive oil
