It’s that time of the year when Eid is here and so are the countless guests that come with it. So why not give them something different this Eid?

Time to get that grill out and start preparing some delicious and juicy BBQ’s. Here are a few recipes from renowned chefs and perhaps the loads of meat crammed in your freezers will empty soon.

Pistachio Kebabs

About the Chef:

Chef Mona Mosly is probably best known for her appearance as a judge on the hit cooking show, The Taste. After being on the show, Mosly was offered a very special job at Al Jadayel Catering Co. that is responsible for catering to airline flights.

Serves: 4
Preparation time: 15 mins
Cooking time: 10 mins

  • 500 gr/1 ¼ lb. / 2 ¼ cups ground lamb (or half and half with ground beef)
  • 1 medium onion, finely chopped
  • 4 garlic cloves, crushed and finely chopped
  • 60ml/4 tbsp pistachios, shelled
  • Bunch of flat leaf parsley, finely chopped
  • 5ml/1 tsp red pepper or paprika flakes;
  • 5ml/ 1 tsp freshly ground black pepper
  • Salt to taste
  1. Place all the ingredients in a large bowl and use your hands to combine and knead the mixture until smooth. Let it rest for a while.
  2. Dampen your hands with water and shape the mixture around metal skewers. Barbecue until golden brown and cooked through.

  • 4 kilo meat (minced)
  • 2 kilo fat (minced)
  • 1 teaspoon cinnamon
  • 1 teaspoon white pepper
  • 1/2 teaspoon nutmeg
  • 1 tablespoon salt
  • 1 tablespoon pepper paste
  1. Place all the ingredients in a large bowl and use your hands to combine and knead the mixture until smooth. Let it rest for 10 – 15 minutes.
  2. Dampen your hands with water and shape the mixture around metal skewers. Barbecue until golden brown and cooked through.

    Tip: A bowl of water with a drizzle of olive oil to help shape the kebabs

  • 2 pieces of 200 grams Tenderloin fillet (2 cm thickness)
  • 2 tablespoons olive oil
  • Pinch of salt and pepper
  • 5 sliced mushrooms
  • 1 tablespoon butter
  • 1 cup cream
  1. Season the piece Tenderloin with olive oil and black pepper.
  2. Grill the piece of meat over medium heat for 2 minutes each side.
  3. To prepare the sauce, sauté the mushroom in butter till its golden, add cream, salt, and black pepper. Let it boil then remove from heat. (you can serve sauce like this or blend it)

Preparation time: 20 mins
Cooking time: 20 mins

  • 1 medium red onion, sliced into rings
  • 680g thin steak
  • 6 tablespoons olive oil
  • Salt and freshly ground pepper to taste
  • 2 tomatoes, sliced into rings
  • 4 fresh basil leaves
  • 1 tablespoon garlic minced
  • 1 big Panini bread
  • 1 teaspoon mustard
  • 2 cheese slices
  1. Preheat a griller to medium high heat.
  2. Soak the steak with 5 tablespoon olive oil, salt, pepper, and garlic for 15 minute
  3. Meanwhile caramelize the onion with the remaining olive oil and set a side
  4. Grill the steak until slightly charred, 3 to 4 minutes per side. Transfer to a cutting board and let rest at least 5 minutes. Then cut to thin slices
  5. Prepare the Panini, brush with mustard, and add beef, caramelized onion, tomato, basil, and cheese slices.
  6. Grill until the cheese melts.

Stuffed Macaroni with Beef

Preparation time: 40 mins
Cooking time: 30 mins

  • ½ pack large shell pasta
  • 2 cups tomato sauce
  • 1 tablespoon oregano
  • Salt and pepper to taste

For the stuffing:

  • 2 cup ground beef
  • ½ cup chopped onion
  • 2 clove garlic minced
  • 5 tablespoon tomato paste
  • 2 cups water
  • Pinch of cinnamon
  • Salt and black pepper to taste
  1. In a large pan stir ground beef until dried, add 1 cup water and cook until absorbed, add onion, garlic, salt, pepper, and cinnamon, stir until all tender. Add tomato paste and the remaining water, bring to boil for 20 minutes.
  2. Boil salted water cook the pasta half cook then drain well.
  3. Season the tomatoes sauce with salt and pepper, add oregano. then pour a little to cover the baking dish bottom.
  4. Stuff pasta with beef mixture, arrange in the round baking dish.
  5. Pour more tomato sauce on top of it.
  6. Put in oven until pasta is cooked.

Chef Loulu is a hardworking check who labored for many years in this field. She began the cooking classes in her own modest small kitchen until she was able to build a professional domestic kitchen for her students. That was 12 years ago.

Serves: 4 to 5
Preparation time: 15 mins
Cooking time: 8 mins

  • 8 chicken breasts
  • 2 mozzarella cheese balls
  • 8 large basil leaves
  • 8 large beef bacon
  • 2 small lemons
  • Salt and pepper to taste

Lay the chicken breast flat. Season each one with a little salt and pepper. Place one quarter of cheese balls and a basil leaf in the centre of each one and roll the chicken up to enclose the filling. Wrap each breast in a slice of beef bacon and thread onto a metal. Cook the breasts on hot barbecue for 8 minutes on each side until the mozzarella starts to ooze. Cook the lemon halves until charred. Serve the sticks drizzled with lemon juice.

  • 300g salmon fillets
  • ½ cup lemon juice
  • 2 teas.p. black pepper
  • 125 g butter
  • 1 tbsp. flaked almonds, toasted

Season the salmon with salt and pepper. Cook it on a hot greased grill until tender. Warm the lemon juice, add the black pepper . Gradually whisk the butter into the lemon. Season with salt. Spoon over the hot fillet, sprinkle with almonds.
