Low Carb, Low Calorie & Guilt-free Cauliflower Crust Pizza

Cutting back on carbs? Then this recipe will satisfy your pizza craving!


Of course nothing can replace the original taste of flour pizza dough, but when on a diet and avoiding carbs, I’m willing to overlook that. This pizza recipe is definitely the one you can enjoy without feeling guilty 🙂

Ingredients:

  •  Cauliflower florets from about 1/2 a large head
  •  1 large egg, lightly beaten
  •  1/2 cup shredded low fat mozzarella cheese
  •  Salt and black pepper
  • 1/2 teaspoon paprika

  • Pizza pan
  • Parchment paper

Here are the 5 incredibly easy steps to make it

Directions:
Line a pizza pan with parchment paper, and preheat oven to Gas mark 5/190ºC. Here’s how you get to work on your crust.

1. Begin by cooking the cauliflower florets

Fill half of a large pot with water and bring it to a boil. Add the florets and cover; let it cook for about 10-15 minutes or until done. Drain well and let cool.

2. Make the cauliflower rice

Blitz the cauliflower in a food processor until finely chopped, like rice.

3. Make & shape the dough

In a bowl, combine the cauliflower with mozzarella, paprika, salt, pepper and egg. Press the dough out onto a baking sheet lined with parchment paper and spread into a circle, resembling a pizza crust.

It will not be like any pizza dough you have ever worked with, but don’t worry – it will hold together!

4. Bake it yo!

Bake for 25-30 minutes until firm, golden brown and starting to crisp a little at the edges.

5. Load on the toppings!

This is the step when you load it with all your favorite toppings. I made an oil-free pizza sauce (recipe inspiration), and topped it with some chicken chunks, tomatoes, onions, green chilies, crushed chili flakes and cheese.

Bake for an additional 10 minutes.

Doesn’t that look amazing! This was the first time in my life I didn’t feel bad eating pizza!
